1. I really think that can be put down to poor representation by the local authorities. I get the impression it's a job given to the junior/intern. I don't think OSM should copy their lack of detail.

Nothing has "disappeared"

water=reservoir is an existing, globally well used tag, double the instances to that of landuse.

"data consumers" take the database as is.

Please don't join two paths to a barrier/stile etc as routing software will state that the gate has to be passed through to walk from the footway to the track, which, in the real world is unnecessary.

I fundamentally disagree that buildings have a 'type'.
The subjective 'that's looks like it used to be a railway station/school/whatever' leads to errors in the OSM database.

Once it stops being a train station, it is not a train station. OSM maps current objects. The major renderers appear to agree.

If this building became a Marks & Spencers instead of a church, how could it possibly be assessed to have been a church when it has no ' common characteristics' with a church.
