It's not just me. See https://forum.openstreetmap.org/viewtopic.php?id=69069 Still, it seemed to start sorting itself out yesterday

I had noticed the problem with not being able to add hedges when I connected fields to roads, but that side of the mental debate lost to the side of me that hates leaving weird gaps where there is somehow no land use at all. I looked for guidance on the issue and somehow failed to find the wiki where I see now it is in fact covered. Fortunately, most of the cases I've done it have been in south somerset, where nobody seems to care...(!) I've been working away there for weeks without a single comment, but one night dabbling near Bristol and two people pop up to errant my errant ways :)

I wish someone had told me that sooner, I've done it a lot! Sorry! Noted

Perusing the wiki, it appears actually 'meadow' would be best -

"Used to tag an area of land primarily vegetated by grass plus other non-woody plants, mainly used for hay (meadow) or for grazing animals (pasture). "

hi Dave

For grazing land, I've been on the fence between 'grass', 'farmland', or even 'meadow'. Good to get a steer on this, thanks.

Sheep and cow pasture I can totally see makes sense to group under farmland... Grass paddock for keeping horses still feels a bit awkward - not really an equestrian facility, nor farming, nor managed lawn. Still, the amount of grass fields I am personally certain are purely for non-farming horses is vanishingly small, so probably not worth worrying about
