I see a track/cycleway crossing the (unused, it seems) ends of runway 24/06 on the southern side of airport, but on Strava Heatmaps it seems nobody have ridden or walked/run there. It is really accessible?

It is not a footpath, but a gravel road.
Moreover, "name" is completely wrong, it means "path done in Montalcino", which is not the official name of the road ("Strada Comunale della Villa a Tolli") but sounds like a personal remark.

It is a natural park which was privately operated and privately owned. It is not operated anymore, if not "disused" then "abandoned"

as for track type, you're right. I did as I (and almost all Italian mappers) am used to do, without checking which are the local customs. In Italy there is plenty of real roads (even provincial roads) with gravel/earth surface which cannot be described satisfactorily with surface alone. Unfortunately smoothness is too subjective... anyway, as soon as I can I will look and restore the edit.

for the pavé, maybe I misunderstood the different types. I read the wiki in English and I understood there were three possible solutions: cobblestones if rounded/uneven stones are used, paving_stones when the stones are man-cut and surface is pretty even, sett when the stones are man-cut but surface is more uneven.

Did I get wrong? It seems the tree solutions are used in the same situation, I mean the "classic" pavé as in the spring classics (and a lot of residential roads also...)

C'è il cartello di divieto di transito sia in alto che a Capanne, ma senza altre avvertenze. O almeno, c'era quando ci sono passato a primavera... le bici passano, ma a stretto senso del CdS il divieto vale per tutti...
