I think it's not necessary to delete all these areas you have drawn. You could leave tag amenity=monastery but remove building=yes from these polygons.

Seems like standard OSM map doesn't show such kind of amenity. But data is still inside and you can use use it for searching and other purposes.
Religious features is a part of thematic mapping.

I hope that you could find projects related with religious features.

Why do you want to highlight monasteries amenities? Is is for better identification on OSM? Here are some ways how to do this:
- You can map every particular buildings in amenity area.
- If you know the names please add them to the amenities. It will create a POI (label with the name). So identification could be much easier.
- Add node (POI) with info that was described above. Here is an example node/307728708#map=19/41.68989/44.61131
