The document at fgov.be doesn't seem to contain any diacritic anywhere (see e.g. the words "general", "Releve") so this is more of an encoding issue.

Si l'accès est interdit alors il faut juste ajouter le tag access=no ou access=private à ces chemins.
access=*

S'ils sont supprimés alors quelqu'un qui n'est pas au courant pourrait les ré-ajouter sans les information d'accès.

When an area has a 'hole' in it you create a multipolygon so that there is no overlap.

osm.wiki/Relation:multipolygon

Draw the outer shape then select relation > new relation > multipolygon > the tags you want, then add outer as the role. Then when you draw the holes select relation > the relation you just created, and add role inner.

There are a few times where I traced things on 2015 imagery because it was taken when deciduous trees have no leaves and then corrected the position with 2016 imagery, which might cause things to be slightly off where there is strong slopes.

Hello, thanks for the advice, I migh have gotten a bit overzealous doing this. Sometimes it's no clear where to put the limit and making a lot of nodes isn't hard with JOSM so I stuck to the borders closely. I hadn't thought about the data size problem.

I should have moved the tracks while doing this to keep it coherent. Still learning. I will try less nodes in the future.
