Well, how is it possible to tag non-"normal, valid features"? This should be possible, as it is very helpful for people in the forest.
In my opinion these objects will be more permanent than the planned motorway. Have a look at Hambach forest - the tree houses still exist, the mine didn't expand into the remaining forest. -

OSM is a database, not a map. The map at www.openstreetmap.org is just one example how the data can be used.
There are two main issues with the reverted changes:
1. Most of the mapped features are temporary. It is very questionable whether they will exist for longer than a couple of days or weeks. OSM is a project for permanent features. In general, we do not record temporary changes if their duration is below a certain threshold. The threshold is between six weeks and six months – this depends on where the feature is (rural vs. urban), how important the feature is (major road vs. forest track) and whom you ask. In order to avoid taking a stand, OSM prefers to wait for a certain time if there is a conflict in reality. For example, we refused to update boundaries in Nagorno-Karabakh during the frontline was moving.
The features which could be restored are those outside the path of the motorway and the other area used by construction/police logistics.
2. The mapped features were tagged with wrong tags. Using historic=castle for a police base is just wrong (https://www.openstreetmap.org/node/8117410018/history).
Using place=village for a group of a few tree houses is not correct either. place=village is a tag for villages and a German map user expects a place=village in Germany to be a permanent settlement looking like a village. There are tags for tree houses, e.g. building=tree_house.
Drawing circles around the tree houses and tagging them with landuse=residential to get a grey rendering on the map is considered tagging for the renderer.
OSM has a free-form tagging approach and we do say that one can tag things as they want (read this in abstract way). However, there are lots of established tags with an established meaning. An uncountable number data consumers relies that the meaning of these tags is uniform, that a police station is a police station and a church is a church. This means, that you can add features which will exist for a certain time but you should not tag a candlelight vigil as a camp site. Please look for existing tags using the OSM wiki, Taginfo, your favourite search engine or invent a new tag. If you need custom maps for managing your protest, you should look at uMap (https://umap.openstreetmap.fr/ but there are also other OSM local chapters hosting this service). uMap allows you to create overlays over a base map with custom vector data.
