I want to add a residential road, it comes off the main road and then splits left and right to form a T at the end, how do I split it at the end?

in josm select crossing road, press ctrl, select point where you want to split, in menu edit select split way.

Add a new way for the T junction with the same tags as the rest of the road. There are many cases when a road is split into several ways so anyone using the data has to cope with multiple ways being used for the same road.

It doesn't matter that a road is made of multiple ways, the name tag is the important part.
